Bountiful Blessings







You know, just when you know you're having to stretch things, the Lord provides all you needs. :) You won't believe me, but we are not usually given this much--hardly every much at all. When we are given something, we are truly grateful! With that said, I should show you how the Lord has blessed and ways that I am implementing them into our menus.

First, last Saturday we were given a big bag of sweet potatoes from a friend. They couldn't use them all as the mom is the only one that likes sweet potatoes. Then last Sunday we were given a big bag of maybe 10-12 loaves of whole wheat french type bread ( the kind you make sub sandwiches with). This lady's dad drives a truck from some food supply people.We have already had some for a few sandwiches and with some fried chicken. I froze the rest to make more garlic bread or sandwiches.

Then we had a social at church Sunday night. There were leftover hot dogs and buns so we split them. We had enough for a hot dog each for Monday's lunch. :)

THEN on Wednesday we were given a big watermelon. We enjoyed that after supper last night. After work yesterday James brought home this huge basket of bell peppers, a cantaloupe and some peaches. This produce came from the largest peach grower on the eastern coast. It was as a thank you for James and the company he works for doing such great work for them. This was after James took 8 of the peppers over to my parents' house. Isn't that wonderful! Instead of the usual pizza we are have stuffed bell peppers. :)

I added some bell pepper and onion to our chicken and rice. Yumm! The sweet potato casserole and peas were good as well.


Here's today's menu:

Bfast: banana/ peanut butter milkshakes We have quite a bit more milk to use before the date runs out on Sunday. More milkshakes are in the plans! I get our bananas from our local produce stand. Most of the time I get them when they are getting too ripe for .25-.30 a pound. I load up and freeze them for later use in shakes or banana bread. Meal costs for the shakes is about $2.75

Lunch: leftover chicken and rice, sweet potato casserole, peaches... meal cost is FREE!!!

Supper: Stuffed bell peppers, sliced cucumbers, leftover peas. The only cost to this whole meal is the ground beef, rice, tomato sauce and seasonings. Meal total is about $7.00. We may have cantaloupe for dessert.

Total meal cost for today is $9.75. We'll round up to $10.50 to include a gallon of tea. :)

The next two days we will be eating one meal away from home. A local church has invited fellow churches for a 4th of July celebration. It's quite a drive but we are sure it'll be worth it as they have a lot of good singing. I don't think they have a sermon though. :(

On Sunday afternoon we are going over to my parent's house to celebrate. We are grilling out over there. Mama never wants me to bring anything. She likes doing it herself. So these days are going to be a welcome break for making large meals.

That is amazing! The Lord really does bless! I'm really enjoying your posts on stretching meals further. I've been working on that as well as making homemade foods a little more convenient by making my own mixes, freezer meals, and things like that, so I'm not so tempted to buy the much more expensive convenience foods. Those can really break the budget. Praying you all have a safe and blessed 4th of July!
