Recovering

As I sit here typing I smell the scent of Linen Fresh Lysol in the air. I have sprayed everything down, am washing all linens and trying to catch up on the dailies that weren't so daily this week. It appears as if all seven of our children have survived the flu. A family in our local church had one of their children tested and, yes, it is indeed the dreadful, full-fledged flu. The children still have that aggravating cough and are not full of the energy that usually oozes from them but they are on their way.

A regular sized large egg compared to a double yolk egg.

Eggs from the hatchery.

Yesterday I thought to be clever and go to our local grocery store and stock up on eggs as they are running $1/dozen this week. We had been short on fresh eggs from the back yard and I cringed having to buy overpriced eggs from the store. So, as "clever" as I was I went and bought 13 dozen. So James comes home from work, beaming, and says, "I have a money saving surprise for you!". Oh good! I love money saving anything. He brought in a huge box of EGGS! I said, "well sweetheart, I have a surprise for you too!". When I opened the fridge to show him my stash, we both bursted out laughing. Good news is that a man that works at our local hatchery told James that when the hens lay double yolk eggs, they get rid of them as the chicks from double yolk eggs don't survive. So he told James to come by and get as many as he wants! Yay! As James and I went into the backyard to feed the chickens and make sure they were locked up for the night, guess what was waiting for us. Yep, four more eggs. :) By this time we had over 18 dozen. We are passing along 8 dozen to family and friends. Guess what we had for supper last night. You know it! We had a breakfast supper.

Also, the last two trips I had to our local grocery store, they had mark down milk. Some of the milk had over a week until expiration! I took all they had each time and freeze what I don't use. The regular 1/2 gallon jugs were marked down to .75 each and one 1/2 gallon of buttermilk was marked down to .50. I used half of that jug for biscuits last night and will freeze the rest for another batch of biscuits or cornbread later. This same store had marked down bagged salad mix almost every time we go in there too. I don't think anyone in our town eats salad except for us. So each time we go in we get bagged salad for usually .89 a bag. I love marked down deals. :D

We also picked up some leg quarters, a few weeks ago, for less than .50 a pound. They were being sold by the box. I bought only 20# worth but was glad to get into the deal. My criteria for meat usually is poultry needs to be under $1/pound. Pork and beef need to be under $2.50/pound, preferably $2/pound. I can't wait until we get the butchered beef for our freezers! I am craving some juicy beef... That's another thing, as long it doesn't interfere with nutrition, we eat simply what is at the rock bottom prices. Lately that's been poultry. I am about done with poultry for a little while. :)

Great deals on the eggs. I have froze milk before. I didn't know that you could freeze buttermilk as well.

Have a great day and glad that your kids are on the mend.

Wow Susan, the lord has blessed you this week! I have tried to freeze milk when our little store had gallons of it $1.50, but the jugs were mis-shapen when I took them out and a few of them had leaked. How do you freeze milk?

Thanks,
Heather

Heather,

I take a little milk out of each jug before putting in the freezer as the liquid expands once frozen. So I take enough out to make air space for the expansion, just like with liquid that I freeze. :) Yes, the Lord is so good.

Cheryl,
Yes, you can freeze buttermilk just like sweet milk. I hope that you have a great weekend! Yes, hopefully everyone will be all better soon.

Divamom,

Yes, a whole lot of breakfasts and baking! I plan on baking a bunch of muffins this morning for breakfasts later. :) We had homemade pancakes this morning, so were able to use a few then too. I've been keeping boiled eggs as snacks as well. Have a great weekend!
