tomato pie
As you know, I like for us to make it on a tight budget, whether we have to or not.
Last night as I was making all of those breakfast meals, I separated out the cheddar cheese into what meals they will go in. I took a container and put enough cheese for two meals of quesadillas. Then another container for breakfast burritos, taco soup and tacos. The leftover cheese is in a bag to itself for whatever we feel we will want it for. This is a way to stretch the cheese! You know what you have for what-- a sort of inventory. Also, you know what you have left for creativity.

That is a great way to stretch it. I know I always look at the menu to see what I still need cheese for.
