Thursday, 9/1




Happy September!

Well, I shared with you the menu for the first two weeks of September. We went on a grocery shopping trip yesterday. This is to only last the first two weeks. Normally we' shop for the whole month but not this month. After I had the lists finalized, we did our shopping, stocked the shelves and 'fridge we were ready for a break! After taking some time off (AKA taking a nap!), I set to work in making supper. We had oyster stew, of which is a special treat here. My hubby was pleased to have some as it's a family recipe that his grandpa used to make.

After supper, James had to go on a call. While he was gone, I decided to make some things to stock the freezer. Thata' way it'd be easier most morning for breakfast and for sending James off to work with some lunch. I don't know about you but I am all thumbs after waking up in the mornings. The first 30 minutes or so I spend just trying to wake up! If not, I am dropping things and could possibly hurt myself if not careful while in the kitchen.

Still I don't like having cereal all the time as it doesn't stick well with us and the children are hungry in an hour or so again. So I do like some type of protein with breakfast. All of that to say, I made some meals ahead of time and put them in the freezer.



I made some sausage biscuits and put them in an ice cream bucket to freeze. You say, "an ice cream bucket???". Umm, yeah, you freeze ice cream in the buckets so why not other food? :D



After frying all of the sausage that I put in the biscuits, I decided to use the sausage grease to fry eggs to put in english muffins. I also put some ham in the english muffins, then put them back into the packaging and into the freezer.



So, while I was at it, I made up sandwiches for James' lunch for the next two weeks and froze them as well! Can I say, "FREEDOM!" :D I plan on making some breakfast burritos for the freezer as well. So then for the next two weeks I will not have to cook breakfast or make James' lunch except for two mornings. Sweeeeeeetttt. :D

This was so very simple as I used pop biscuits and also I used the griddle for four breakfasts but only have to wash it once! I am excited to reap the benefits of having this done ahead and I can focus on other important things.

Susan,

Love this idea of the frozen sausage biscuits. Jon eats one every morning for breakfast. I have always bought Tenn. Pride, but might just try making my own.
