Happy Saturday



We've had a fairly quite week. Light schooling was held and we relaxed a lot. Some of the children have the sniffles and so we are trying to get them recovered. Hopefully the others left without the cold doesn't get it! :)

I have been trying to moreso watch what I am putting in my mouth as well. I sort of fell off the calorie counting wagon for a while, thus gained 3 pounds! :( So here I go again, in hopes that I lose 13 more pounds this coming year. Last year I lost 17 (3 gained back) so hopefully it'll be doable. I turn 40 this coming week so hopefully I can be fabulous at 40 in so many ways....including weight-wise! :)




Despite being back on the calorie counting wagon, I have been having fun with cooking and baking! This pic was snapped right as I was about to make some oatmeal cookies. I bought some oatmeal in bulk, which came out to about .41/lb. Needless to say, we'll be eating oats quite a lot. Ha!


I had fun making some shrimp and grits this past week. It's a southern dish, quite common around here. Shrimp is one of my favorites. Long story short- I went to the dentist office and they had a print hanging on the wall of a local famous, seaside landmark. I told the dentist that it reminded me of shrimp and grits. So he, the hygienist and I talked of how we make the recipe. I think that dentist visit cost us more than a cleaning! Thankfully the local store had shrimp buy one get one free! Hopefully this coming year we can do some shrimping of our own. I think that'll be much cheaper. ;)

Oh my goodness! I LOVE shrimp and grits.
In the next town over we have a resturant called Alligator Soul. It's one of the only places (outside of my beloved grandma's kitchen) to get really good southern cuisine.I had that dish and have been dreaming of it ever sense!
We do eat grits for breakfast in our home but that was the first time I'd had them with supper.
WOW they are good. I'll for sure give your recipe a try.

When I was loosing weight (I still need to lose more), I would cut my sugars down in baking. We have got to where we enjoy the less sugar. It is tricky counting calories, but that is what I did as well.
