Slow Cooked Meatball Stew

I thought I'd share this recipe just in case anyone is interested.

1 (1lb) package baby carrots
1 lb. small red potatoes (2 1/2 to 3 in. in diameter)
1 jar or can of mushrooms, drained
1 small onion cut into wedges
About 36 frozen, cooked meatballs
1 12 oz. jar of beef gravy (I used 2 packets of brown gravy, prepared)
1 (14.5 oz) can diced tomatoes, undrained
black pepper to taste

Layer ingredients in order listed. Cook for 8-10 hours or until carrots are tender on LOW. Stir gently before serving. This time I did not have red potatoes so cut russet potatoes into chunks and it worked fine.

I made this recipe by 1 1/2 what was listed. I will completely double next time as the crockpot was wiped clean in one meal.

I hope you all really like this. I think it makes the best broth! Make sure not to use italian style meatballs though! It's just not the same that way.
